[align=left]Tunisian soup-shorba Frick
Ingredients
300 gr of lamb meat or chicken, cubed
200 gr of frick or any soup pasta
3 tbs of ghee
2 medium onions, finely diced
1 cup of chickpeas
1 cup of cilantro and parsley, minced
1 tbs of paste tomato
1 tbs of paprika
1 tsp of turmeric
1 tsp of Cinnamon
1 tsp of black pepper
1 tsp of salt
1 tsp of coriander
few chili flakes or Hressa
2 bay leaves
pinch of dried mint
2-1.5 L of hot water
3 tbs of olive oil- optional
For serving:
1 lemon and home toasted garlic bread
Directions
- Add onions and ghee to a casserole cook over high heat. when onion is translucent add tomato paste cook for 2 min, in the meantime, add all the spices, Hressa, parsley and cilantro and the chickpeas mix well
- Add the lamb to mixture, cook for few min then add about 2-1.5 little of hot water , throw in the bay leaves and frick
- Let the soup simmer over low-medium heat for about 1- to 2 hours , stir from time to time.
- When its cooked add a small quantity of dried mint and the olive oil, mix and let sit for 3 min
serve with lemons and some toasted garlic bread
Note: if using pasta make sure that the meat is cooked first then add the pasta and cook for around 15 min
