Food and Cooking Section How to cook basmati rice For 4 to 5 people: Ingredients two cups of basmati rice a ¼ tsp. of cumin three cloves one tsp. of all spices two cardamoms or 1 tsp. of cardamom powder Pepper and salt to taste four tbsp. oil three cups of hot water Directions: Soak basmati rice for 30 min prior to cooking After 30 min rinse the rice a least 3 times, In a pan fry all the spices on medium heat for 2 min than add rice, fry fro 2min, add water and stir well cover the pan tightly and cook it on medium heat for 5 min until the rice level is equal to the water level Lower the heat to low- and cook the rice for additional 15-20 min Serve with some grilled meat, poultry or fish Omani rice IMG_0021.jpg two cups of basmati rice half a bag of biryani rice spices, optional two finely diced onions one tbsp. tomato past one tsp. of cumin two cloves one tsp. of all spices two cardamoms or 1 tsp. of cardamom powder Pepper and salt to taste one tsp. flakes of chilli pepper , optional four tbsp. of ghee five cups of water half a chicken or a whole chicken half a cup parsley two tbsp. of batter mixed with 1 tbsp. minced ginger and 3 cloves of minced garlic Directions: Soak basmati rice for 30 min prior to cooking In a pan add the water + chicken+ Indian spices and cook on a low heat After 30 min rinse the rice a least 3 times and check if the chicken is cooked In another pan, fry onions on medium heat till the onion are dark brown than add the tomato paste and all spices and fry for 2 min, after that add 3 cups of the chicken water and stir well, add rice and parsley to the water, mix and let the water boil until it reach the level of rice, cover the pan, then simmer on a low heat for 15-20 min Tips in a pan fry the cooked chicken in a small amount of ghee as to get that golden brown look decorate with fried nuts you can also fry some shrimp and scallops, cut the cooked chiken into cubes and mix with rice | ||||||||||||||||||||||||||||||
